THE RESEARCH OF HEBI PRODUCT FORMULATION USING LOCAL MATERIALS FOR TREATMENT SEVERE ACUTE MALNUTRITION IN CHILDREN UNDER 5 YEARS OF AGE IN VIETNAM

Abstract

Aims: To research on the formula of RUTF - "Ready to Use Therapeutic Food" in the form of pressed cubes under the brand name HEBI for producing RUTF products which are suitable for Vietnamese children in term sensory properties, using available raw materials at the production site.


Methods: Analyzing physical-chemical and microbiological indicators according to AOAC, sensory evaluation according to the taste comparison method.


Results: The product formula of RUTF (HEBI) has the following ingredients: maltodextrin 9.7%, mung bean 8.3%, sugar 15.6%, soybean 11.7%, rice popcorn 5.8%, lipid powder 7.8%, whey protein concentrate 7.3%, milk 8.7%, cooking oil 13.6%, shortening 8.7%, premix 2.785%.
