KNOWLEDGE AND ATTITUDE OF THE PEOPLE IN HO CHI MINH CITY ON SALT, FREQUENCY OF INSTANT NOODLE CONSUMTION AND SALT CONTENT IN THIS PRODUCT

Abstract
High salt/sodium consumption is documented to be highly associated with hypertension
and related cardiovascular diseases. This study aims to investigate the knowledge and attitudes of the HCMC people about salt and salt reduction products, the average amount
of sodium in instant noodles, and the frequency of using of this product. A cross-sectional
study was conducted combining qualitative and quantitative methods. Qualitative research
on 100 subjects was conducted to determine knowledge and attitudes of people about salt
and instant noodles commonly consumed. A quantitative study was conducted to determine
sodium content in 30 common instant noodles and the frequency of using this product on
487 subjects. The study found that many subjects knew that eating a lot of salt was associated with high blood pressure, heart disease and stroke. The average salt content of instant noodles was 4.3 grams of salt/pack, nearly equal to one-day salt intake for adults
recommended by WHO. Each person consumes 1.2 ± 1.2 packs of instant noodles per
week on average. Most of the subjects (61.3%) had a habit of salty eating.
