ASSESSMENT OF MICROBIOLOGICAL AND CHEMICAL CONTAMINATION IN SOME READY-TO-EAT FOODS SOLD AT SCHOOL GATES IN THANH HOA CITY

Abstract
A cross-sectional study was conducted on 285 samples of ready-to-eat foods and 150
people who produced and sold food products at 150 food stores at school gates of in
Thanh Hoa city. The study showed that: 33.3% of the food stores had contaminated
products (over the critical limit), among which 3.6% of the food stores had chemical contaminated products, 32.1% had microbiological contaminated products, and 42.6%
had both chemical and microbiological contaminated products; the percentage of food
sample contaminated with Coliforms, E.coli, and alkaline coloring was 31.0%, 18.0%
and 2.2%, respectively; none of the samples were contaminated with peroxide; 22.3%
of products from meat, 20.0% of cake samples were contaminated (of which 41.7%
of cake samples contaminated with Coliforms, products from meat contaminated with
Coliforms, E.coli, alkaline coloring were accounted for 34.4%, 29.5% and 3.6%), all
other products (such as seafood, pickled fruits) were within the allowed limits. The
proportion of people who produced and sold food products that had right knowledge
and practices was 69.3% and 66.7%.
