RESEARCH ON SOLUTIONS TO IMPROVE THE EFFICIENCY OF MANAGEMENT OF INDUSTRIAL KITCHENS IN EXPORT PROCESSING AND INDUSTRIAL ZONES IN HO CHI MINH CITY

Abstract

Objective: To assess the status and propose solutions to improve the management efficiency of industrial kitchens in export processing zones and industrial parks in Ho Chi Minh City in 2025.


Methods:  Qualitative research through in-depth interviews with 25 participants including industrial kitchen managers/leaders, food safety management experts, state management officials, and business representatives. Combined with direct observation at 10 representative industrial kitchens using structured observation checklists.


Results: Three main management models were identified, including outsourcing service providers (45%), self-organization (35%), and hybrid model (20%). Key influencing factors include management capacity and leadership commitment (80%), regulatory oversight (75%), and staff expertise (70%). The proportion of kitchens with standardized operating procedures reached 80%, and ISO/HACCP implementation reached 75%.


Conclusion: Management efficiency of industrial kitchens in export processing zones and industrial parks in Ho Chi Minh City needs to be improved through synchronized implementation of solutions in organizational management, digital technology, human resources, standard processes, financial investment, and sustainable development.
