Abstract

For more than a century, amino acids have been discovered with many physiological
roles and functions for living organisms. Recently, amino acids have been confirmed
positive roles in supporting for nutritional treatment. Essential amino acids, particularly
BCAA, are indispensable to support the treatment of patients with kidney disease
at various stages. Non - essential amino acids also play important roles in therapeutic
nutrition, such as glutamine, which is effective in enhancing nutrition and improving
immunity for leukemia patients; In particular, glutamate that is used in diet via the form
of MSG increases gastric secretion, promotes and speeds up the digestion of food and
improves the quality of life of elderly patients through changing their behavior during
eating. Besides, glutamate also helps maintain the palatability for the salt-reducing
diet, thereby not only supporting patients to follow better the salt – reducing diet, but
also contributing to the prevention of healthy people from risk of chronic non-communicable
