APPLICATION OF MONOSODIUM GLUTAMATE IN DIETS FOR THE ELDERLY

Abstract
Over the past 100 years, monosodium glutamate (MSG) has been known as a safe flavor enhancer that can improve umami taste and palatability. Recently, there have been
many clinical studies suggesting that supplementing MSG in diets positively influences
the digestive system, such as increasing saliva secretion, increasing concentration of salivary IgA antibodies and accelerating digestive functions. In addition, adding MSG is also
proved to improve quality of life of elderly. Moreover, there are suggestions that using
MSG in suitable concentrations in cooking can be a solution for patients who need to follow low sodium diet. All these studies indicated the important role of MSG in improving
nutrition for people, especially for the elderly.
