KNOWLEDGE AND PRACTICE ON FOOD SAFETY OF PEOPLE DIRECTLY PROCESSING FOOD AND TEACHERS AT PRESCHOOLS IN THAI BINH CITY IN 2018

Abstract

This study investigated 107 people directly processing food and 172 teachers at 43
preschools in Thai Binh city in 2018 in order to assess their general knowledge and practices on food safety during food processing. The results showed that 90.7% of people directly processing food have a certificate on food safety knowledge; 94.8% of teachers and
94.4% of direct food processors had good knowledge on food safety; 57.6% of teachers
had correct practices on food safety, of which 90.7% performed hand washing before distributing food for students and 94.7% asked students to wash their hands before and after
eating; 48.6% of people directly processing food had good practices on food safety, in
which 92.5% used gloves and 87.9% wore masks during food processing.
