TRIAL PRODUCTION OF EUPHORIA HIRTA L. EXTRACT DRINK

Abstract
The study was conducted to introduce the trial production procedures of an Euphoria
hirta L. extract drink, which helps prevent and control diabetes. The drink was manufactured following this formula: 25 g/l of Euphorbia thymifolia Extract, 25 grams/liter
of honey; 0.3 grams/liter of stevia sweetener; 10 grams/liter of ginger. The trial products were evaluated based on sensory score, carbohydrate level, clarity, polyphenol and
vitamin C content; accordingly, such parameters had been adjusted to comply with the
trial production. The findings indicated that Euphoria hirta L. extracted drink achieved
a relatively high sensory evaluation score, with 85.7% of consumers preferring the
color, 89.8% of consumers liking the flavor and 87.7% of consumers enjoying its taste.
The product meets the requirements and food safety standards of the National Technical Regulation for non-alcoholic beverage products QCVN 6-2: 2010/BYT.
