THE STATUS OF NUTRITION AND FOOD KNOWLEDGE AMONG SCHOOL CANTEEN STAFFS IN 2018

Abstract

Knowledge of school canteen staffs on nutrition plays an important role in the decision to choose and prepare healthier foods for students. Objective: To assess the status
of knowledge on nutrition and food of school canteen staffs.
Methods: A cross-sectional descriptive research was conducted in 48 schools at all levels in Ho Chi Minh City,
Ha Noi, Lam Dong and Da Nang City.
Results: there were 18.7% of the canteen staffs
who had not been trained on nutrition; 10.4% of these staffs had never heard of knowledge on proper nutrition; The percentage of canteen managers classified as “Failure to
have proper nutritional knowledge” was 35.4%; the proportion of canteen staffs who
did not know that foods high in salt, sugar and fat unhealthy foods was 33.3%; 20.8%
and 18.7%, respectively; 4.2% of staffs said that fruits and vegetables were unhealthy
foods; 20.8% - 33.3% of staffs did not know that steaming and boiling was methods
to prepare healthy foods. Knowledge of proper nutrition and healthy food selection of
school canteen staff was not as good. Training and communication activities on appropriate nutrition for school canteen staffs should be promoted.
