RESEARCH ON PRODUCTION OF DRIED INSTANT SNACK FROM GOAT MEAT

Abstract

Instant dried products is a popular food in Vietnam. However, in the market, instant
dried products are mainly made of pork, beef, chicken, fish, deer, squid, snake... The
production of dried goat meat to create a product with high nutritional value, typical
flavor and taste will meet the market demand, thus creating more choices for consumers as well as contributing to diversify the market of instant dried products in our
country. The research results showed that in order to achieve good quality of instant
dried product from goat meat, the mixing of spices in the ratio of 16% sugar, 1% MSG
(monosodium glutamate) with 1% pepper, 0.75% garlic and 7% chili powder created
a gorgeous dried goat-like product with attractive flavor and taste, toned texture that
were suitable for consumers. For the product to be preserved for a protracted time,
ensuring food safety and hygiene, it's necessary to conduct drying process at 750C to
20% moisture.
