Abstract

Food hygiene and safety (FSH) conditions in collective kitchens of kindergartens directly
affect children's health. This study was conducted with the objective to describe the situation of food hygiene and safety at collective kitchens of Nam Sach district kindergartens,
Hai Duong province in 2019. Method: Cross-sectional descriptive study in 23 kitchens in
kindergartens in Nam Sach district and Hai Duong. Results: FHS conditions in the kitchens were not yet achieved. The level reached different criteria were as follows: Facility
sanitation reached 4.3%; sanitary conditions of equipment and tools reached 43.5%; human condition reached 47.8%, sanitary condition in processing reached 100%; the condition of kitchen documents and records was 17.4%; All facilities did not meet the general
conditions on food hygiene and safety. Conclusion: There is no collective kitchens meeting all the general conditions on food hygiene and safety, except for hygienic conditions
in food processing with absolute percentage. The lowest rate was the hygienic condition.
