Abstract

Food handlers’ knowledge and practices on food hygiene and safety in restaurants directly affect the quality of customers' meals. The study aimed to describe knowledge
and practices on food hygiene and safety of food handlers in restaurants in Ninh Hai
commune, Hoa Lu district, Ninh Binh province in 2019. Method: A cross-sectional
descriptive study on 66 food handlers working in 33 restaurants in Ninh Hai commune,
Hoa Lu district, Ninh Binh province. Results: The proportion of food handlers meeting
the qualification of food safety knowledge was 75.8%, the proportion of those who
achieved the qualification of food safety practices was 21.2%. In summary, food handlers have only improved in terms of food safety knowledge, while there are still a lot
of practical issues that need to be considered to ensure the food safety for customers.
