Vi khuẩn Lactic (LAB) đóng một vai trò quan trọng trong các ứng dụng công nghiệp thực phẩm, dược phẩm. Cùng với axit lactic, việc sản xuất bacteriocin và các hợp chất kháng nấm có thể áp dụng làm chất bảo quản trong một số loại thực phẩm. Hơn nữa, nhờ các đặc tính tăng cường sức khỏe, một số chủng probiotic có nguồn gốc từ LAB đã được khai thác ứng dụng trong dược phẩm và thực phẩm chức năng. LAB cũng có tiềm năng để sản xuất các chất có hoạt tính sinh học như exopolysacharide, axit lipoteichoic, axit linoleic liên hợp,... với các ứng dụng khác nhau. Để khai thác hiệu quả quá trình lên men LAB, các thách thức vẫn nằm ở sự kết hợp của quá trình lên men và tách chiết để đảm bảo sự ổn định hoạt tính sinh học của các sản phẩm lên men.
